Lemon Pepper Squid Salad

1 box of Box of Lemon Pepper Squid
  • 4 cups spring mix lettuce
  • 1 cup celery
  • 1 red capsicum
  • 1 yellow capsicum
  • ¼ cup soy sauce
  • 5 red chillies
  • ½ cup fresh lemon juice
  • 1 tablespoon of sesame oil
  • 4 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon ground pepper
  • 1 tablespoon fresh ginger

Finely chop the red chillies and ginger and add to a blender along with the soy sauce, lemon juice, sesame oil, olive oil, salt and pepper. Mix for one minute, or until the dressing is well combined.

Preheat a lightly oiled frypan to a medium temperature. Place frozen Lemon Pepper Squid in the frypan and cook for 8 – 10 minutes or until golden. Turn occasionally. Remove from pan and drain well.

Finely dice both capsicums, and julienne the celery. 

Plate the salad greens and top with Lemon Pepper Squid. Drizzle the dressing over leaves and squid. Top with the capsicum and celery.
