Lime Mayo Shake 'ems

1 box of Box of Shake 'ems – Thai Spice
  • 1/2 cup whole egg mayonnaise
  • handful of fresh coriander - chopped
  • 1 teaspoon of lime rind - finely grated
  • juice of 1/2 a lime
  • pepper - to season

Preheat oven to 220ºC (or 190ºC fan forced).

In a small bowl, combine the mayonnaise, half the coriander, lime rind and juice. Mix well and season with pepper to taste. Refrigerate 

Place frozen fish on a preheated baking tray and bake for 18-20 minutes or until golden brown, turning over halfway through cooking. Once cooked, place the fish in to the shaker bag, pour in the Thai seasoning and shake it evenly.

To serve, arrange the Shake ‘ems on a platter and serve the Lime Mayo in a dipping bowl on the side. Garnish with coriander.
